Lateral Cooking is a companion book to Segnit’s previous book The Flavour Thesaurus and is every bit as useful, ingeniously organised and enjoyable to read as its celebrated predecessor.
It is a cookbook designed to help cooks develop their own recipes. It contains a set of core recipes which, once the reader is familiar with them, can prove indefinitely adaptable depending on what you have in the fridge, what looks good at the market/supermarket, or just what you fancy eating.
The starting points for the chapters include bread, batter, roux and pastry. The bread chapter for example leads with a recipe for flatbreads which can then be tweaked to provide recipes further along the same family: scones, soda bread, crackers.
