Halen Môn is the Anglesey based family run salt producer that was founded by the inspirational Lea-Wilson family. This book is the story of their business and how sea salt is made but also what to do with it. How to season food with salt and how to cook with it – there are recipes for panzanella, salted caramel sauce and dukkah.
