The original flavour thesaurus was published in 2010 and this sequel appeared 13 years later. It takes the same format as the original book but focuses on an entirely new cast of ingredients and flavours, it is also more plant based than the original.
The flavour thesaurus is a book to read to inspire you to experiment with certain flavour profiles rather than an instructional recipe book. Each ingredient entry appears in alphabetical order, and after a short introduction to the hero ingredient there are then suggestions as to what to pair or match that ingredient with.
So . . . under Broad Bean, Segnit gives us & chicory, & chilli, & samphire and more. There are suggestions with each pairing as to how the two might be used in combination.
